In skillet, add Oil, Onion, Garlic.
Cook on med heat, stirring often.
When onion is lightly browned, add Tomato Paste.
Stirring constantly until the Paste has'separated' and is a deep burgundy/brown color.
Be careful not to let burn!
Takes about 10-15 minutes.

Then, add the beans, salt and 1cup of the water.
Let simmer about 10min.
Stir occasionally.
When mixture begins to thicken, stir in Cayenne Pepper, to taste and continue to simmer til you have a thick, velvety'sauce'.

Heat olive oil in a large pot; saute the onions, celery, garlic, paprika, tumeric and coriander until soft and fragrant.
Add the broth, raw fish, tomatoes, potatoes, saffron and bay leaf.
Bring to a soft boil; reduce heat and simmer, stirring often, until potatoes are tender and fish flakes (about 15 minutes). The fish should fall into pieces with stirring.
Remove the bay leaf.
Add salt and pepper to taste.
Soak bay leaves, peppercorns and cloves in 1/3 cup of oil overnight.
Rub cleaned fish with salt and black pepper and then the flavored oil.
Bake in a hot pan or in the oven or grill on a charcoal fire.
Then fry onion, tomatoes, tomato paste and red hot pepper in the rest of the oil.
Add dried shrimp or anchovy. Place the cooked fish on a bed of plain, boiled rice and coat with the tomato, onion and pepper sauce.
Decorate with French-fried onions, sliced green peppers, fried plaintain, sliced hard-boiled eggs, etc.

Drain water from cod fish and stir into fine pieces.
