Melt margarine in dutch oven, add onions, celery and saute until tender.
Add flour to make a roux and cook over low heat 10 minutes, stirring constantly to prevent scorching.
Gradually add hot milk, stirring constantly to maintain smoothness.
Add clam juice and chopped clams and cook 20 minutes more.
Add green pepper, thyme and pepper.
When green peppers are tender, add potatoes cut into small chunks and cook 10 minutes more.

Polynesian Sweet And Sour Sauce(Walt Disney World)

In a saucepan, combine 1/2 cup water, the vinegar, sugar and food coloring, if desired.\tBring to a boil.
Dissolve cornstarch in 2 tablespoons water and stir into vinegar mixture, using a whisk.
Cook and stir five minutes.
Add green pepper, onion and pineapple.\tServe on shrimp, chicken or pork.
Refrigerate leftovers.

Cream together sugar, shortening, salt, baking powder, vanilla and egg until light and fluffy.
Fold in cake flour.
Add chocolate chips, stirring just enough to mix evenly.
Wrap cookie dough in plastic wrap, forming two 2-inch rolls of dough. Refrigerate and chill thoroughly.

With melted margarine, combine celery and onions, cook for 5 minutes or until transparent.
Add flour to make roux and mix until smooth.
Let it cook for a few minutes, then add hot clams and juice and half of the hot milk. Mix until all the flour lumps are smooth.
Continue cooking for about 10 minutes.
Add green peppers, potatoes and seasonings.
Combine, cook until potatoes and peppers are done, then add the remainder of the milk.

Lo Mein Chili (Walt Disney World)

Brown ground beef in a 10-inch skillet for about 10 minutes. Drain any excess fat.
Add diced onions and spices.
Saute for 3 to 5 minutes and add diced tomatoes, tomato paste and water.
Reduce heat and simmer for 8 to 10 minutes, stirring occasionally.
To serve, place 1 cup of cooked lo mein noodles in a bowl. Top with half the chili and garnish top with sliced scallions and grated cheese.

Blueberry Cheese Buckle (Walt Disney World)

Preheat oven to 375. Grease muffin tins or use muffin cups.
In medium bowl add melted butter. Whisk in milk, eggs and vanilla.
In another bowl, mix all dry ingredients together, then add milk mixture and stir until combined. Do not overmix. Gently fold in blueberries. Divide batter among muffin pans.
Fold lemon rind and lemon juice to the whipped cream cheese. Insert 1 teaspoons of cream cheese mixture into the center of each muffin.
For topping, rub together all ingredients until crumbly. Sprinkle over each muffin.

Place butter on 15- x 10-inch jellyroll pan and heat in 325F oven until butter melts, about 7 minutes.
Meanwhile, beat egg whites with dash of salt until frothy, then gradually add sugar, beating to stiff peaks. Gently fold in almonds and cinnamon.
Pour almond mixture into jellyroll pan and stir, coating with butter.
Bake, stirring every 10 minutes, until almonds are crisp, about 40 minutes.
Serve warm or at room temperature.

Cook the onion over medium heat until just translucent.
Add the tomatoes and the jalapeno pepper and cook over medium heat for about 5 minutes or until onion starts to look red.
Add the sugar, salt, and pepper and cook for another 2 minutes.
Before serving, stir in the cilantro.

'Ohana Cheesy Scalloped Potatoes--Walt Disney World

Place a layer of potato slices and onion in a buttered shallow dish.
Sprinkle with some of the cheeses and salt and pepper.
Repeat layers and then pour cream over the potatoes.
Bake at 350 for 1 hour and then let stand 5 minutes.

In a large bowl, mix cottage cheese, horseradish, sour cream and sliced scallions. Set aside.
In a separate bowl, mix eggs, milk, salt and pepper.
Make 4 medium omelettes in a hot saute pan, adding equal amounts of cottage cheese mixture to each omelette.
Fold each omelette in half to hold filling.

Walt Disney'S Roast Beef Hash

Preheat oven to 350F degrees.
Saute onion in melted butter until tender but not browned; combine sauteed onion with beef, stock and raw potato and put into a buttered 4-cup baking dish.
Bake in preheated oven for 1 hour.
Remove from oven and shape mixture into an oval patty; place in a hot buttered skillet.
Saute until lightly browned on both sides; meanwhile, in a second skillet, fry the egg.
Top hash with egg and serve immediately.

In a large dutch ovn, soak beans overnight in cold water.
Drain, add water to cover (2 inches over beans), and simmer with onions until tender (about 4 hours).
Meanwhile, prepare sauce by browning meat and minced garlic in oil. Add remaining ingredients, and simmer for 1 hour.
When beans are tender, add sauce to beans and simmer for 1/2 hour.

Drain off water; put beans, onions, and salt into a large kettle; add water to come 2-inches over beans. Simmer about 4 hours, or until tender; add hot water if necessary, to maintain liquid level.
Meanwhile, prepare sauce. Heat oil in a large deep skillet or Dutch oven; add garlic and ground beef; cook slowly until meat is lightly browned. Add remaining ingredients; simmer 1 hour.

Preheat oven to 350\u00b0.
Grease a 9 x 9 x 2-inch baking pan. Melt butter and chocolate in large pan over low heat.
Remove from heat.
Stir in sugar, flour, baking powder, vanilla and nuts. Add the eggs and beat well with an egg beater.
Pour the batter into the baking pan. Bake for 30 minutes.
Remove the pan from the oven and place it on a rack.
When the brownies are cool, cut them into squares.
Makes about 16 brownies.

Place strawberries in a blender or food processor.
Process until well blended.
Remove to bowl and add remaining ingredients. Mix well.

Wrap garlic in aluminum foil.
Bake at 400\u00b0 for about 30 minutes, or until garlic is very soft (like butter).
Spread on anything you desire.
Disney World reportedly adds it to butter or margarine to make a garlic spread for bread, potatoes, etc.
