Stuffing:
Preheat oven to 350

If you're using bread, toast bread in a large shallow baking pan in middle of oven until just dry, 25 to 30 minutes.
If you're using stuffing mix, you can skip this step.
Cook onions, celery, and herbs in butter in a large heavy skillet over moderately low heat, stirring occasionally, until celery is softened, about 10 minutes.
Stir together bread or stuffing mix, vegetables, broth, and salt and pepper to taste, then cool completely, uncovered.
Freezes extremely well.
Stuff in the turkey or bake at 350 for about 30 minutes.
NOTE: If you cannot find stuffing bread in your grocery store,
Prepare stuffing according to package directions. Stir cranberry and nuts into stuffing. In a 3-quart oblong baking dish, spoon stuffing. Arrange turkey pieces on top of stuffing. Pour gravy over turkey. Bake at 400\u00b0 for 20 minutes or until hot. Serves 6.
Toss together 2 1/2 cups dry bread cubes and 2 tablespoons instant stuffing mix; set aside. Combine the remaining bread cubes, instant stuffing mix, mushrooms, onion, celery, olive oil, poultry seasoning, salt, sage, pepper, gravy, condensed soup, and cranberry sauce in a large bowl.
Place the reserved bread crumbs and stuffing mix into the bottom of the slow cooker. Add the chicken and top with the vegetable, bread, and gravy mixture. Cover, and cook on Low for 4 to 6 hours.
Preheat oven to 300 degrees F.
Make stuffing mix on stove top according to package directions which are here: heat broth or water, with the butter or margarine, to a boil and remove from the heat. Add the stuffing mix and toss lightly with a fork until moist throughout.
Add apples and raisins; mix thoroughly.
