FOR INDIVIDUAL STUFFIN MUFFINS:
Brush a 12 muffin

In large bowl cream Ricotta, applesauce, fruit sweetener and oil.
Stir in egg and vanilla.
In separate bowl combine flour, wheat germ, soda, baking powder, nutmeg and allspice.
Add to batter; blend well.
Add zucchini, apples, raisins and sunflower seeds.
Spoon into 15 muffin cups which have been sprayed with nonstick coating.
Bake 20 to 25 minutes (or until firm and golden brown) at 350\u00b0.

Fry the bacon in a large saute pan until just brown and crispy.
Remove with a slotted spoon and pour off excess grease from the pan.
Coarsely chop the onions and celery and saute in the pan with the butter until soft and translucent.
