This recipe was in the drawer for some years, but I'm fairly sure it was in one of the \"Three Rivers\" cookbooks.
As I mentioned in some other recipes, if you don't have them, get them.
Anyhow, it's a great dish.
The marinating makes the meat tender and very tasty.
Since the steak varies in thickness, you end up with a choice of well done to medium, or even rare.

Comfort Fruit Salad

Combine pineapple chunks, grapefruit sections, orange sections, cherries, peaches and warm orange marmalade slightly. Remove from heat and mix with Southern Comfort.
Pour over fruit and mix well.
Serves 6 to 8.

Mammaw'S Southern Style Potato Salad

Boil potatoes until they are tender but firm, do not over cook or the salad will be like mashed potatoes.
Drain potatoes immediately and let them cool completely.
Add (to the cooled potatoes) all other ingredients.
Toss lightly until thoroughly mixed making sure not to mash the potatoes.
Top the salad with the sliced eggs and sprinkle with Paprika.
We love it while it's still warm.
Refrigerate if you like it cold for 2 hours.

Southern Comfort Chicken

Preheat the oven to 375 F degrees.
Fry the chicken joints in the oil and butter until browned.
Put them aside in a casserole dish.
Make a sauce by adding the chopped onion to the oil and butter in the pan and fry for 2-3 minutes.
Add the mushrooms, parsley, lemon juice, Southern Comfort and seasonings.
Stir well and cook for a further 3 minutes before pouring the sauce over the chicken joints.
Cover and cook in the 375\u00b0F oven for about an hour.

Old-Fashioned Egg Salad

In a bowl, combine mayonnaise, lemon juice, onion, salt and pepper. Stir in eggs and celery. Cover and chill. Use this recipe for the Potato Salad and/or Macaroni Salad recipes. Yields 4 servings.

Cajun Chicken Salad For Two

Whisk together first 5 ingredients; set aside.
Toss together lettuce, tomatoes and onion. Divide between 2 plates.
Liberally coat chicken breast with Cajun seasoning.
Heat 1 tablespoon vegetable oil over medium-high heat; add chicken and fry until cooked through and crusty, about 4 minutes per side.
Transfer cooked chicken to plate and cut into crosswise thin strips.
Arrange chicken atop salad.
Spoon dressing over and serve.

Turnip Salad(Southern Style)

Pick a mess of salad from the garden, about 3 pounds. Wash to remove bugs, worms and dirt. Parboil in a pot of water after adding a pinch of soda. Drain. Put in pot and cover with water. Add olive oil and salt to taste. Cook on medium heat (2 hours) until tender. Drain and chop. Serve.

Zesty Southern Pasta And Bean Salad

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse pasta in cold water. Place in a large mixing bowl and add dressing and salt; mix well.
Combine pinto beans and black beans in a colander; rinse with cold water and add to pasta. Add corn, tomatoes, cumin, chili powder, onion powder, garlic powder, dried red pepper flakes and salt and pepper to taste; toss lightly.
Chill salad in refrigerator until ready to serve.
