Pat the chuck roast dry and season it all

Heat a large skillet over medium-high heat; brown roast on all sides, about 4 minutes per side. Transfer roast to a slow cooker. Pour the beef stock into the skillet, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add the broth and onions into slow cooker; cover and cook on Low for 5 hours. Add potatoes, carrots, celery, and parsley. Cover and cook on Low until roast is tender and cooked through, 3 additional hours.
Place potatoes, carrots and celery in 3 1/2-qt. slow cooker. Season roast with pepper and place on top. Mix soup and water. Pour over all. Cover and cook on Low 10 to 12 hours. For thicker gravy, mix 1/4 c. all-purpose flour with 1/2 C. water. Remove beef and keep warm. Add flour mixture to slow cooker. Turn heat to High. Cook until mixture boils and thickens, about 10 minutes.
Place the vegetables in the bottom of a large slow-cooker. Place roast on top of vegetables and pour soup over the meat. Cool 8-10 hours on low.
Spray inside of 3- to 4-quart slow cooker with cooking spray. If beef is tied, remove strings or netting. Place beef in cooker.
Sprinkle with brown sugar. Pour dressing over beef.
Cover and cook on Low heat setting 10 to 12 hours.
Remove beef from cooker; place on cutting board. Shred beef, using 2 forks.
Return beef to cooker; add Italian seasoning and mix well.
Using slotted spoon to remove beef from cooker, fill each bun with about 1/3 cup beef. Serve with remaining juices.
Spread the olive oil on the inside of a slow cooker.
Place the venison roast inside and season well with grond pepper and garlic powder (if using garlic powder and not fresh garlic)

Cover and cook on LOW 6-10 hours depending on how you like your meat, slicable or falling apart. My preference is falling apart so I cook for 10 hours on LOW.

Top with 1/4 cup cheese.
