My mother is German and Irish.
When they got married, my mother got my Cuban grandmother's recipe for Spanish rice.
Being a picky eater herself and having 4 kids, my mom distilled the recipe down to a mild version without all the \"slimy\" things in it that most kids won't eat.
I jokingly call it my mother's Irish Spanish rice!
Each year on Three King's Day (January 6), I bring this rice in for my children's classes.
For Potatoes: Peel potatoes, cut in halves and boil
For potatoes, cook potatoes in boiling salted water for about 20 mins. Drain.
For sauce, heat 1 tbsp butter and saute shallots, garlic, and almonds. Add Calvados, creme fraiche (or sour cream, if using) and cream. Add capers and season to taste.
Meanwhile, heat 2 tbsp butter and saute sole for about 4 mins per side. Serve with potatoes and sauce, sprinkled with parsley.
Cover the potatoes with water and bring to a boil, turn the heat to medium but keep the potatoes boiling.
Add kale to the boiling potatoes.
When potatoes are soft drain the potato kale mixture
Add ricotta and butter, salt and pepper to the drained potatoes and kale - mash coarsely.
Serve.
