Combine Shrimp, Lemon and salt. Set Aside.
In a wok, add the olive oil, garlic and chili flakes. Set your heat to simmering or very low heat.
Let the garlic and chili infuse into the oil for 20 minutes. It's important to keep the heat really low or the garlic will burn.
After 20 minutes, turn up the heat to medium high and add the marinated shirmp and crab roe paste.

Beat egg yolks, add the syrup after cooling it then blend well and strain.
Line a pan or small molds with thick caramel syrup.
Fill 3/4 full with mixture and steam until toothpick inserted comes out clean.
Allow to cool before unmolding.
NOTE: Tocino Del Cielo is often baked in small individual molds and placed in small souffle cups for serving.

Add 2 to 3 tbsps oil and continue to cook until meat has caramelized, moving in pan regularly to prevent from burning.
