Prickly Pear Orange Marmalade

Remove skins from prickly pears.
Slice and remove skins.
Cover orange with water and soak overnight.
Add orange juice, prickly pear, and sugar to orange which has soaked overnight.
Heat slowly and stir until the sugar is dissolved.
Continue stirring frequently and boil about 30 minutes or until the mixture is thick and the fruit is clear.
Pour into hot, dry, sterilized jars to within 1/4 inch of the top if paraffin is used; otherwise fill to the top.
Seal.

Combine the juice and sugar in a saucepan. Bring to a boil. Remove from heat; pour candy mixture onto the prepared baking sheet.
Bake until firm, about 5 minutes. Remove and let candy cool in the pan until set, at least 30 minutes.
Cut candy into bite-size pieces and wrap in plastic wrap.

Cut prickly pears in half lengthwise and scoop out flesh with a spoon. Process in a blender until smooth. Push pulp through a fine mesh strainer to extract about 1 1/2 cups juice. Discard pulp.
Place prickly pear juice, water, lime juice, stevia, and mint in a blender. Blend until smooth. Pour into two 16-ounce glasses filled with ice.

Preheat the oven to 350 degrees. Puree the undrained pears in the food processor. Combine puree with enough milk to make 4 cups liquid. Combine bread with pear puree mixture. Mix well. Beat together the sugar, brown sugar, eggs, and vanilla extract. Combine with bread mixture. Melt the butter in 9x13x2 inch baking pan. Pour bread pudding mixture into pan and bake for about an hour. Serve with Caramel Cream Sauce.

Cactus Pear Margarita

Place tequila, orange liqueuer, Cactus Pear syrup, lime juice, and ice in a cocktail shaker and shake for 10 seconds.
Place a few tablespoons of the cactus Pear syrup on a small plate. Dip the rim of the glass in the syrup, and let the excess run off, then dip in salt.
Strain the mixture into the glass and garnish with a lime wedge.

Charlie'S Tutti-Frutti

In a blender, blend the cantaloupe, watermelon, papaya, carrot juice, orange juice, beet juice, apples and prickly pears if using with ice. Serve icy cold.
