Poor Man'S Cookies

In a mixing bowl combine oats, sugars, flour and salt. Combine soda and water.
Stir into oats mixture along with shortening and vanilla.
Roll into walnut-size balls.
Place on greased cookie sheets.
Bake at 350\u00b0 for about 10 minutes or until golden brown.
Remove and allow to stand about 2 minutes before removing to wire rack to cool. (Poor Man's Cookies because they contain no eggs, milk or nuts.)

Put all beans into crock-pot with onion.
Season with a slice of country ham, cut into pieces.

Poor Man'S Stroganoff

In a 10-inch skillet with lid, brown hamburger and add garlic salt.
Poor noodles on top. Do not mix.
Mix sauce and tomato juice; pour over noodles.
Cover and simmer until noodles are soft, about 30 minutes.
After noodles are soft, stir and remove from heat.
Serve hot.

Poor Man'S Caviar

Toss all ingredients to combine. Cover with plastic wrap and refrigerate at least 3 hours or overnight to allow flavors to come together.
Serve cold or at room temperature.

Pudding Au Chomeur (French Canadian Poor Man'S Pudding)

In a bowl sift flour and baking powder together.
In another bowl, cream butter and sugar and add vanilla.
then slowly add the milk and flour mixture in alternating 1/4 cup increments until all together and smooth.
Spread in a buttered baking dish.
For the sauce: In a sauce pan, mix all the sauce ingredients together and bring to a boil.
Boil for a few seconds and then pour over the cake batter (do not mix).
Bake in a 325 preheated oven for 45 minute.

Poor Man'S Rice

Cut bacon in to bite size pieces and cook in a large frying pan till half done.
Cut up onion into chunks and add to bacon.
Cut hot dogs into bite size pieces add to bacon cook till nicely browned.
Heat oil in a large pan, you can use a pot or wok anything you have that will fit all ingredients and allow you to stir.
Add all ingredients to oil.
Stir quickly for 3-4 minute
Garnish with more ketchup.

Poor Man'S Pierogies

Saute onion in 1 stick butter until tender.
Cook noodles as directed on box.
Boil potatoes, then mash.
Add cubed cheese, salt, pepper, and remaining butter to potatoes and mix until well combined.
Put layer of noodles in 9x13-inch baking dish.
Layer 1/3 of sauteed onions over noodles, then 1/3 of potato mixture.
Repeat layers, ending with potatoes on top.
Sprinkle with Parmesan cheese.
Bake at 350\u00b0F for 30-35 minutes.

Poor Man'S Lobster ( Mahi Mahi)

Cut fillets into 2 inch chunks and drizzle with the lemon juice.
Pour the beer into the bottom of a saucepan (if using fresh lemon juice, toss the leftover lemon rind in with beer) and place a collapsible vegetable steamer over the beer.
Bring the beer to a boil, place the fish chunks in the steamer, cover and steam for 5 to 10 minutes, dependent upon the thickness of the fish.
The fish will be rubbery if it is overcooked.
Meanwhile, heat the butter with the garlic and salt (I heat it slowly until the garlic is no longer raw).

Poor Man'S T-Bone Steak

Pierce the roast with a fork on both sides.
Mix all marinade ingredients together. Pour over the chuck roast in a marinade pan or zip-lock bag.
Refrigerate overnight or up to two days, turning several times.
Grill it as you would steak. Let rest a few minutes, slice and serve.

10-Layer Poor Man'S Lasagna Casserole

Brown hamburger in frying pan with salt and pepper, oregano, Italian seasonings, onions and garlic until done.
Drain grease.
Stir in (drained) mushrooms and spaghetti sauce.

Poor Man'S Salad

Mix all ingredients together and refrigerate several hours. Is best after a day or two.
Cooking time includes refrigeration time.

Poor Man'S Mac & Cheese Casserole

Brown ground beef and set aside and keep warm. Or brown while cooking mac & cheese.
Cook macaroni & cheese (I prefer Kraft brand)according to directions on box.
Add ground beef, cream style corn, drained whole corn, and drained peas to macaroni and cheese. And you're done!
If it's to dry for your taste just add some more milk.
Frozen corn and peas can be used if you prefer.

Poor Man'S Steak

Mix well and shape in a loaf.
Let it sit in the refrigerator for at least 8 hours or overnight.
Slice in pieces and fry until brown.
Put slices in layers in a roasting pan spread cream of mushroom soup over the top - making sure to cover each piece.
Bake 1 hour at 325 degrees.

Preheat oven at 350.
Brown the ground beef with onion and garlic.
Add the tomato sauce, corn, and rice and mix together.
Top with shredded cheddar cheese.
Put the dish in the oven and cook for 15-20 minutes or until the cheese is nice and melted.

Poor Man'S Oyster Stew - Creamy Salsify Soup

In a saucepan, bring the salsify and water to a boil over medium heat.
Reduce heat; cover and simmer for 18-20 minutes or until tender but not mushy.
Stir in cream, butter, salt and pepper.
Cook and stir for 4 minutes or until butter is melted and cream is heated through.

Rich Man'S Poor Man'S Soup

Heat half the oil in a large wide, pan.
Once hot (but not smoking) add the (optional) pancetta, followed a couple of minutes later by the onion, carrot, garlic, and parsley. Give it a good stir.
Put a lid on it and cook slowly for 20-30 minutes, stirring regularly.
Tip half the beans in with the veggies and mash the other half with a potato masher before stirring them in too.
Pour in the tinned tomatoes and the stock, and chuck in any old rind of Parmesan (it's wise to keep these, as they are a great source of flavour).

Place water, salt, lemon juice, onion and celery in 4-quart pan.
Bring to boil.
Add fish.
Bring to boil again for 3 minutes.
Drain.
Place fish on cookie sheet.
Brush on melted margarine or butter and sprinkle paprika on top.
