Wash potatoes, but don't peel, and slice very thin (best done using a mandolin) Pat the potatoes dry using paper towel.

Melt 2 1/2 T butter in a 10-inch cast iron or ovenproof heavy skillet over medium heat.

Anna'S Poor Man'S Cake

Cream shortening and sugar.
Dissolve baking soda in the 1/4 cup of hot water.
Add baking soda, water and milk to shortening and sugar; mix.
Add all other dry ingredients and mix well.
By hand, add nuts and raisins.
Grease and flour 2 bread pans.
Bake 45 minutes.
Recipe makes 2 large loafs.

Anna'S Favorite Cheesecake

Preheat oven to 325\u00b0. In a bowl, combine cream cheese, sugar, lemon juice, vanilla and salt. Mix well until blended. Add eggs, one at a time, mixing well after each addition. Place graham crust tin on a baking sheet (to prevent spills). Pour in cream cheese mixture. Bake for 25 to 30 minutes until knife inserted comes out clean.

Anna'S Apple Crisp

After preparing the apples, put them in a large bowl.
Add Apple Coating to Apples and stir until every slice is coated. Put them into a 9x9 baking dish. Pat down.
Mix topping and put on top of apples.
Bake at 350 degrees 40-45 minutes or until apples are tender.
If you want to make a 9x13 pan, double the Apple Coating and use 1 & 1/2 recipe of the Apple Topping.
