Beef Sirloin With Herbed Butter And Pommes Frites - cooking recipe

2 lbs potatoes, peeled and cut into matchsticks
1/2 tbsp cracked black pepper
4 None beef sirloin steaks (8 oz each)
None None Peanut oil, for deep-frying
1 tbsp olive oil
None None FOR THE HERBED BUTTER
1 clove garlic
4 tbsp (1/2 stick) butter, softened
2 tbsp finely chopped fresh basil
2 tbsp finely chopped flat-leaf parsley
Preparation

Place the potato in a large bowl. Cover with water and let stand for 1 hour. Drain and pat dry with paper towels.
Meanwhile, for the herbed butter, beat the ingredients in a small bowl until combined. Place the mixture on a piece of plastic wrap; wrap tightly. Shape into a rectangle. Refrigerate until just firm.
Combine the pepper and salt on a baking pan. Press both sides of the beef into the seasoning mixture. Let beef stand on the baking pan while making the frites.
Heat the peanut oil in a large saucepan or wok on medium-high heat. Cook the potato, in batches, for 3 mins or until just tender, but not browned. Drain on paper towels.
Meanwhile, heat the olive oil in a large skillet on high heat. Cook the beef until browned both on sides and cooked to desired doneness. Cover and let stand for 5 mins.
Reheat the peanut oil in the pan. Cook the frites again, in batches, until lightly browned and crisp. Drain on paper towels.
Serve the beef topped with herbed butter, accompanied with pommes frites.
