Heat oven to 425 F.
Spread salt on a baking sheet.
Place pan in the oven for 5 minutes to pre-heat.
Remove pan from the oven and arrange oysters, deep side down, on the salt.
Roast until the oysters open - about 5 minutes.
Fully open the oysters with an oyster knife.
Remove the connective muscle attaching the oyster to the shell.
Serve the oysters warm, with Hot Sauce.

ROASTED BERRIES: Preheat the oven to

Shuck the oysters and put them, along with their liquor, into a saute pan; simmer over medium heat until they begin to curl around the edges.
Remove cooked oysters, leaving the liquor in the pan; set oysters aside.

Remove pickling sauce from heat and let cool.
Put the cooked oysters into a quart container with a lid, then pour the cooled pickling sauce over.

Finely chop pine nuts (or use mini chopper). Heat butter over skillet and add saute shallot, Add nuts and crumbs. Cool slightly. Add parsley, bacon, cheese and pepper. Carefully blot oysters dry (can use fresh shucked and then put them back in the shell -- I was too lazy). Put oysters in mini muffin tin. Top with crumb mixture. Bake for about 10 minutes or until they are done as you prefer.

Shuck and clean oysters and shells.
Place largest half shells in a pan; return oysters and prepare to dress.
For each oyster, add one drop hot sauce, two drops lemon juice, dash of pepper and a slice of cheese.
When grill is hot, place oysters directly on grill (no pan).
Cover grill; cook until cheese melts.
Carefully remove from grill; shells will be hot.

Combine cornmeal, flour, paprika, thyme, salt and pepper in a dish. Toss oysters in cornmeal mixture.
Heat enough oil to film base of skillet on high heat. When oil is very hot, add oysters, but do not crowd pan. Saute for about 1 to 2 minutes or until coating is browned. Remove immediately to serving dish. Add more oil as needed to fry remainder. Serve with Chipotle Mayonnaise (recipe follows).

Combine mayonnaise, chipotle peppers and adobe sauce. Season with salt and stir in coriander.
