Preheat oven to 350 degrees.
Steam or boil onion, celery, and carrot until tender, then drain.
Combine all meatloaf ingredients well, and form into loaf.
Bake 1 hour, then remove grease from pan.
Combine gravy ingredients, and pour over meatloaf.
Bake for 30 minutes.
Serve with gravy spooned over top of meatloaf.

Combine meat, toast, egg, minced onion and oregano with 3/4 c tomato sauce in large mixing bowl. Mix well.
Pat mixture in a 9X13 pan lined with wax paper.

Roll up to form the meatloaf. Make sure to seal the seam as tight as you can to prevent the cheese from running out when cooking.
Place in pan seam side down.
Bake at 375 degrees F for 30 minutes.
Add remaining tomato sauce and bake 30 minutes more or until done.

Add in gound turkey, and using your hands, incorporate the mixture into the turkey without over-working it.
Evenly divide the meatloaf into a muffin tin with 12 servings.
Place the muffin tin on a larger baking sheet to protect oven from possible juices overrunning.
Bake in oven at 375*, 20-30 minutes. Meatloaf is done when juices run clear and internal temo is 170*.
