Cook the pasta as per package instructions. Rinse in cold water and toss with a little olive oil. Refrigerate.
For each day, whisk together the liquid ingredients, if there is more than one.
Mix the remaining ingredients with 1 1/2 cup of the cooked pasta, then toss with the liquid ingredients.
For the Chicken and Pesto version, I found that warming the pasta in the microwave just a bit helped it toss more evenly with the pesto. You do need to let it cool a bit before packing it up for your lunch.

Simmer 5 minutes.
Add mushrooms and shrimp and simmer 2 to 3 minutes longer.

Mix together the ketchup, diet cola, vinegar, hot sauce and onions in a large skillet. Add the chicken breasts and bring the sauce to a boil over medium high heat.
Reduce to a simmer and cook for 50 minutes, until the chicken is tender enough to split with a fork. The sauce will be reduced by half and quite rich and thick.
Serve each breast with a quarter of the sauce.
Heat oven to 450 degrees.
Place fries in single layer on foil-lined baking sheet; sprinkle with Mediterranean seasoning. Bake 20 minutes, or until crispy.
