In a food processor, blend garbanzo beans and next 7 ingredients in processor until smooth.
Add red peppers, sun-dried tomatoes, cilantro, salt and pepper. Pulse process, using on/off turns, until coarsely chopped.
Transfer hummus to medium bowl. Cover and chill until ready to serve. Bring to room temperature before serving. Accompany with warm pita or pita chips. Can be made 2 days ahead.allows flavors to develop!

I had to make a double batch of fudge icing to get the right thickness of icing for this cake. The icing recipe I used was a combination of 2 different recipes.
In saucepan combine all ingredients. Bring to a boil, and cook for 1 minute Remove from heat. Whisk with an electric mixer, for 2.5 - 3 minutes, or until it thickens enough. Pour over cooled or warm cake. Doubled this for a 9x13.

Preheat oven to 350 degrees.
Combine all topping ingredients in a bowl. Stir until mixture resembles course crumbs.
In a separate large bowl, combine all pie filling ingredients. Pour into prepared pie crust.( Pre-made or home made).
Bake pie crust and filling in preheated oven for 50-60 minutes, or until a knife inserted 2 inches from the center comes out clean.
Sprinkle streusel topping over pie and bake an additional 15 minutes.
