I use my 30 cup coffee maker, which is a percolator, to make the Wassail.
Put the apple cider in the bottom of the coffee pot. Add the rest of the ingredients into the basket at the top.
Plug in the coffee maker and allow it to perk.
When it stops, the Wassail is done, and it will stay hot during the time you need it. Serve in glass or china cups.
Brandy can be added at this time if desired.

My family enjoys having wassail the entire holiday season, so we normally double or triple the recipe.

Wassail simmering on the stove adds a delicate aroma to the Christmas season and has long been a favorite in our Holiday Open House.
Combine the cider, apple chunks, and cinnamon sticks in a large kettle and bring to a boil over medium heat. Turn the heat down to low and add the mace, anise seed, ground cinnamon, nutmeg, ginger and brown sugar. Stir to combine, and simmer for 20 minutes until the spices have developed their flavor.
Drop in the orange and lemon slices, simmer for 5 more minutes, and turn off the heat. Ladle the wassail punch into mugs and serve hot. Include a few pieces of cooked apple or a cooked orange or lemon slice in each mug.
