OR DEEP MARINATION OF BONE-IN CHICKEN OR QUICK-MARINATION OF BONELESS
In the pressure cooker, add oil

Squeeze juice of half lemon over breast and under skin.
Combine all spices and garlic and rub under skin.

Grilling Method: Indirect/Medium Heat
Remove and discard excess fat from chicken. Pat dry. Brush lightly with oil. Season with salt and pepper. Place chicken, bone-side down, in center of cooking grate. You do not need to turn the chicken pieces.
Grill-roast until breast meat near bone registers 165\u00b0F and thigh meat registers 180\u00b0F. If you don't have a meat thermometer, cook until the chicken meat is no longer pink and the juices run clear. Remove and let sit 5 to 10 minutes before serving.
Stuff spinach leaves, arugula, and garlic under the skin of the chicken thigh and place on a baking dish. Sprinkle with seasoned salt.
Bake chicken thigh in the oven set at 350 degrees F (175 degrees C) until no longer pink at the bone and the juices run clear, about 50 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
Heat half of the oil in a Dutch oven over medium
Heat oven to 425 degrees.
Pour chicken broth over chicken.
Drizzle with olive oil.
Sprinkle with salt, pepper and paprika.
Bake for 45-55 minutes.
