Sarah Christensen'S Steamed Carrot-Suet Pudding(Depression Era)

Wash and peel raw vegetables; put through medium meat grinder. Cut up as needed.
To fit grinder, grind also the beef suet and raisins.
Place in medium bowl; mix with other ingredients until well mixed.
Pack into 1-quart greased and floured mold or a small cloth bag that will hold a quart.
Tie bag and place in kettle with tight fitting lid.
Add boiling water to cover bag or if using mold, just enough boiling water to half way up mold.

Set off and pour in 1 cup cold water, when cool add flour to coat.
Mix lard and sugar together.
Add this to floured raisins.
Sift together flour and spices and add to raisin mixture.

Quick And Easy Chocolate Cake(Recipe From The Depression Era)

Blend together the flour, sugar and cocoa. Make a \"well\" in the center of the mixture. Dissolve the baking soda in the boiling water. In the \"well\", add the scoop of Crisco (about the size of a good egg) and pour the boiling water/baking soda mixture over the top. Blend thoroughly. Gently beat the egg and fold into the chocolate mixture. Bake at 450\u00b0 for 25 minutes or when a toothpick inserted into the center comes out clean. Top with your favorite frosting and voila!!! Sift flour and salt into a mixing bowl.
Cut in half of the shortening with a pastry blender until the mixture resembles cornmeal.
Cut in the remaining shortening with a pastry blender until the mixture resembles small peas.
Sprinkle in the water 1 tablespoon at a time, gently tossing the mixture with a fork after each addition. (Do not be afraid to add more water or flour).

Depression Era Meat Loaf

Mix ground meat, 1/2 cup ketchup, egg, onion or minced onion, Worcestershire sauce and salt well by hand and add corn flakes. Mix again and form loaf; put in roaster pan.
Cover with 1/3 cup ketchup and bacon strips.
Add water to pan.

Bake 1 hour at 350\u00b0.

Cook hamburger and beef bouillon in 2 quarts water. Cool and put in refrigerator overnight. Remove fat from pot and discard. In stew pot, add stewed tomatoes, tomato juice, onions and garlic. Cook as you prepare the rest of the vegetables. Add cabbage last as it cooks quickly.

Fill a medium sized casserole three - quarters full of peeled, cored, and sliced apples.
Add the lemon juice.
In a separate bowl, mix the flour, sugar, cinnamon, butter, and nuts.
Blend until mixture looks crumbly.
