Layer meat and bean mixture in casserole with 1 package of corn tortillas. Top with grated cheese. Bake in 350* oven for 20-30 minutes. Variations: Add canned or left over corn, chopped olives to make it a mock tamale pie.

In a medium, microwave safe bowl, mix cream cheese, chili and diced tomatoes.

Preheat oven to 325\u00b0F. Heat oil in a large Dutch oven then sear pork, working in batches if necessary. Place all pork in pan and add spring onions and chilies and cook for 1-2 mins, stirring. Add flour and cook briefly then gradually add 3 cups water. Add chili sauce, chopped tomatoes, beans, sweet corn, paprika, cayenne pepper and crushed bouillon cube. Cover and transfer to oven for around 2 hours, until meat is very tender. Remove from oven and adjust seasoning. Sprinkle with parsley to serve.
Place the ginger, garlic, chili peppers and tomatoes in a food processor and process to a puree. Pour the puree into a large saucepan. Add the sugar, vinegar and fish sauce. Bring to a boil. Reduce the heat to low and simmer for 30 mins until the mixture has reduced by half, stirring occasionally.
Spoon the hot mixture into small warm sterilized jars and seal. Store in a cool dry place. Once opened store in the refrigerator and use within 1 week.
In a heavy bottomed pot, heat 1 tsp olive oil.

To the browned beef and onion add chili mix, diced tomatoes and chili peppers, crushed tomatoes and water in the 8 quart pot and simmer a couple of hours.
Add more chili powder or water as needed.
I usely add one (1) tablespoon chili powder extra.
Add chili hot beans and simmer until beans are warm.

After you have marinated
Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
Stir onion into the beef. Season beef with chili powder and stir; add chili beans and tomatoes. Season chili with salt and pepper. Bring the chili to a simmer, reduce heat to medium-low, and cook at a simmer until thick, at least 1 hour.

Combine kidney beans, chili beans, diced tomatoes, onion, and tomato paste in a large stockpot; cook and stir over low heat until onion is tender, about 10 minutes.
Heat a large skillet over medium-high heat. Cook and stir beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
Mix beef and sausage into bean mixture; season with cumin, garlic salt, and chili powder. Reduce heat to medium low, cover stockpot, and cook chili for 30 minutes more.
