**This is Homemade Cajun Seasoning mix. Feel free to

Combine the Cajun seasoning and breadcrumbs together in
Calamari:
Slice squid tubes in to rings.
Combine flour and cajun seasoning in a ziploc bag and toss.
Deep fry for 30/40 seconds.
VINAIGRETTE:
In a food processor, process everything except the oil.
Slowly drizzle in the oil until emulsified.
Add chopped coriander.
Place into a bowl for 30mins for the flavours to develop.
Serve on the side or drizzle some of the vinaigrette over the calamari.
Sprinkle Cajun spice evenly on each chicken
Brown crumbled breakfast sausage in heavy 4-6 quart pan or skillet; drain fat.
Add peppers, onions, celery and Cajun powder. Simmer until just about tender, then add garlic and cook until tender.
Add rice and stir until rice is mixed in and coated with sausage and vegetables.
Add broth and Piquante, bring to boil. Cover and simmer for 20 minutes or until rice is tender. Let stand five minutes covered.
Add fresh chopped green onions and parsley; fluff with a fork just before serving.
Serve with French bread and a garden salad.
Whisk together first 5 ingredients; set aside.
Toss together lettuce, tomatoes and onion. Divide between 2 plates.
Liberally coat chicken breast with Cajun seasoning.
Heat 1 tablespoon vegetable oil over medium-high heat; add chicken and fry until cooked through and crusty, about 4 minutes per side.
Transfer cooked chicken to plate and cut into crosswise thin strips.

Spoon dressing over and serve.
Cook meat and onion until meat is no longer pink.

We like this spicy, so I usually add more cajun seasoning than this recipe calls for.

In a bowl combine the oil, Cajun seasoning, lemon juice, parsley, honey and soy sauce.
Pour over the shrimp and toss to coat; cover and chill for 1 hour.

Bake the shrimp in the sauce/marinade for about 10 minutes, or until the shrimp are cooked through.

Preheat oven to 375\u00b0F.
In a small mixing bowl, mix thyme, garlic powder, cajun seasoning, onion powder, black pepper, and bread crumbs.
In a separate bowl, beat one egg.
Spray a 13\"x9\" baking dish with a nonstick coating.

Light Brown Cajun Roux: In a black iron
Dip chicken breasts into melted butter.
Sprinkle Cajun seasoning liberally on both sides.
Broil (high heat) for 7 to 8 minutes, then turn chicken and broil another 7 minutes.
Serve hot with rice and bread.
Stir lemon juice, soy sauce, pickle juice, and Cajun seasoning together in a glass to dissolve the seasoning into the liquid; add tomato-vegetable juice cocktail and stir. Mix vodka into cocktail mixture and add ice.
