Heat 2 tbsp butter in a saucepan, add the onion and saute for 2-3 mins. Add the mushrooms and continue to cook for 4-5 mins, stirring. Season then sprinkle with flour and cook briefly.
Gradually stir in the vegetable stock and cream and continue to simmer, stirring, until the sauce thickens. Stir in the cream cheese.
Slice the bread into triangles. Heat 1 tbsp butter in a frying pan, add the bread and fry for 2-3 mins on each side.
Divide the soup between 4 bowls and sprinkle with parsley leaves. Serve with the fried bread triangles.

After the butter has melted, crack the egg in the pan.
Let sit for about a minute.

When egg is set, flip over and cook other side.
Cook egg to your liking.
Meanwhile, spread mayonaise on bread and place cheese.
Place the cooked egg on top of the cheese, so it will melt.
