Preheat the oven to 425 degrees F.
In a large bowl, toss together the potatoes, garlic, onion, green bell pepper, red bell pepper, olive oil, butter, seasoned salt, cayenne pepper and some kosher salt and pepper.
Pour potatoes onto two rimmed baking sheets. Bake for 20 to 25 minutes, shaking the pan twice.
Raise the heat to 500 degrees and bake until crisp and brown, 15 to 20 minutes, tossing twice.
Sprinkle with a little more salt and pepper before serving.
Bake potatoes and let cool.
Make scrambled eggs with crumbled sausage or bacon mixed in.
Cut 1/4-inch off of the ends of potatoes and scoop out both ends leaving a lining of potato.
Add your scrambled egg/sausage combination into hollowed out potatoes. Put ends back together.
Wrap in foil.
Place in oven for about 10 minutes or until potatoes are warm.
Fry up your potatoes that you scooped out and serve with your breakfast potatoes.
These are great to make ahead of time and can be used for camp outs; just warm on grill.

Place the diced potatoes in a large saucepan, cover with water and simmer until tender, about 20 minutes.
Drain.
Place potatoes in a mixer bowl.
Cut the butter and cream cheese into small pieces and add to the potatoes.

Season with nutmeg, salt and pepper.
Serve immediately or refrigerate and reheat later in a buttered casserole baked at 300\u00b0 for 20 minutes.

Drain sweet potatoes and set aside.

Dice potatoes, when oil and pan is hot through in diced potatoes.
As potatoes are cooking, brown sausage as you would ground beef.
When potatoes and sausage are browned combine the two conserving the sausage grease.
Take beaten egg and scramble in grease.
Mix the egg together with sausage and potatoes and top with cheese.

Pour oil into a 9x13 inch pan.
Peel and wash potatoes well.
Hand grate the potatoes and onion (you can use a food processor, but we like how it tastes better when it is hand grated).
Add the eggs and seasonings and mix well.
Pour in most of the hot oil and mix.
Pour potato mixture into hot pan.
Bake at 350 F for 1-1/2 to 2 hours. (Depending if you like it mushy or well done--bake longer if you like well done).
Place the potatoes in a saucepan with enough water to cover. Bring to a boil, and cook 10 minutes, until tender. Drain and allow to cool slightly.
Heat the ghee in a large skillet over medium heat. Lightly toast the cumin seeds in the ghee. Mix in the green chile peppers and ginger. Season with chili powder and coriander. Stir in the potatoes, and cook about 5 minutes. Season with amchoor and salt, and continue cooking about 15 minutes. Garnish with cilantro to serve.
First, cut a slit in each potato and microwave them until they are half cooked( for me this was about 3 mins.).
While they are cooking, chop up the onions.
Once the potatoes are half done, take them out and cube them.
Get a skillet with oil ready and put your potatoes, and everything else inches
Cook for about 5-10 minutes depending on how crispy you want them.
