Bacardi Pink Squeeze

Pour Rum into tall glass filled with ice.
Fill with Pink Lemonade.

Bacardi Daiquiri

Mix pudding mix with gelatin and sugar in a saucepan.
Blend in 1/2 cup of the water and the eggs.
Add remaining water and cook and stir over medium heat until mixture comes to a full boil. Remove from heat; stir in rum.
Chill.
Fold in whipped topping. Spoon into pie crust and chill firm, about 2 hours.
Garnish with additional whipped topping and lime slices.
Very good.

Beat egg whites until they thicken, add caster sugar, and beat until thick.
in a second bowl, beat egg yolks and salt until thick.
Combine both egg mixtures, and beat until thick.
In a seperate bowl, beat whipping cream until it thickens. Add sugar and vanilla.
Add light cream, milk, bacardi, and whiskey, beating continually.
Combine all the ingredients, chill, and leave for at least 12 hours to really get the full flavour!
Sprinkle each glas with a dash of nutmeg to serve.

Rum Cake With A Butter Rum Glaze

Place all ingredients in a clean glass jar, cover tightly, and let sit at room temperature for 48 hours.
Strain out the pineapple and vanilla. (Don't throw away the pineapple -- it's wonderful served with vanilla ice cream.)
Put the rum mixture in the freezer until very cold.
Serve in shot glasses or martini glasses.

Coco Loco

With an ice pick, poke out two eyes of the coconut shell and drain out the coconut water.
Cut off the top of the coconut as you would cut off the top of a pumpkin for carving.
In a blender put tequila, light rum, dark rum, Kahlua, fruit juices and crushed ice. Blend until frothy and pour into the coconut shell.
Pour a small float of 151-proof rum over the top of the drink.
Skewer the pieces of fruit and stick the end of the skewer into the coconut. Serve with straws.

Bacardi Rum Cake

Preheat oven to 325.
Cake:.
Grease heavily & flower 10\" tube or 12 cup bundt pan.
Sprinkle chopped nuts over the bottom of pan.
Mix all ingredients together.
Pour batter over nuts.
Bake for 1 hour.
Cool.
Invert on serving plate.
Poke holes in top & side of cake with toothpick allowing cake to absorb glaze.
Glaze:.
Melt butter in sauce pan.
Stir in water & sugar.
Boil for 5 minutes stirring constantly.
Remove from heat.
Stir in Rum.

Preheat oven to 325\u00b0. Grease and flour 10 inch or 12-cup Bundt pan. Sprinkle pecans over bottom of pan. In a bowl, combine cake mix
and remaining cake ingredients together until well blended. Pour batter over pecans in cake pan. Bake at 325\u00b0 for 1 hour. Remove from oven and cool. Invert on a serving plate. Prick top of cake with a fork or cake tester. Drizzle and smooth some of the glaze evenly over top and sides of cake. Allow cake to absorb the glaze, then repeat until all glaze has been used.

Summer'S Strawberry Rose

Blend with ice until the consistency is smooth and creamy. The color should be a light pink resembling a strawberry milkshake. If not, add additional Tequila Rose and/or Strawberry Mix.
Serve in a chilled glass with a thick straw. Garnish with fresh strawberries and whipped cream.
**Note** Strawberry Mix can be substituted with Fresh or Frozen Strawberries and Sugar Syrup.
