Authentic Salsa Verde (Served Hot)

In a medium sized saucepan, sweat out jalapenos, garlic and onion, until soft.
Add cilantro, cook until it is wilted.
Add just enough water to cover everything, and simmer about 5 minutes.
In the meantime, cut the tortillas into small pieces.
Add the tortilla pieces to the simmering mixture, and allow them to simmer another 2-3 minutes.
Transfer to food processor, or blender (be very careful, it's hot) and blend until puree'd. (a stick blender works best, to do this rignt in the pot).
Serve hot.

With clean hands, mix all ingredients except for milk and salt in very large bowl. Mixture will feel somewhat dry.
Start adding milk approximately one cup at a time until the mixture feels more moist and pliable.

Basic Italian Sauce(With Meat)

In large saucepot, heat oil.
Add garlic and sliced onion and saute.
Add tomato puree plus 1 can of water, tomato paste and 1 can of water.
Mix. Add salt and pepper.
Sprinkle in all spices, cheese, Angostura Bitters and Worcestershire.
Stir all together. Brown the sausage and meatballs (see recipes in meat section).
Add to the sauce.
Allow to simmer for 2 to 2 1/2 hours, stirring occasionally, or until sauce is slightly thickened and meat is cooked.
Add more of spices, if needed.
May be doubled or tripled.
