Quick And Easy Cold And Creamy Cucumber Soup - cooking recipe
Ingredients

2 T. butter
2 scallions, chopped
2 C. peeled, seeded, and diced cucumber
1 red potato, diced
1 C. lightly packed watercress
2 C. vegetable broth (homemade or bullion)
1 bay leaf
1/2 t. salt
1/2 t. dill weed
white pepper to taste
2 C. plain yogurt
Preparation

In medium saucepan, saute scallions in butter until soft. Add all of the ingredients EXCEPT yogurt, and bring to boil. Lower heat and simmer 10 minutes until potato is tender. REMOVE BAY LEAF.
When cool enough, puree mixture in blender. Cool completely. Add yogurt and regridgerate 1 hour or until cold.
