Zucchini Saute - cooking recipe

Ingredients
    5 large zucchini grated
    2 Tbs butter
    salt
    1 clove garlic
    5 Tbs Heavy cream
Preparation
    Grate zucchini and place in bowl. Sprinkle with 2 tsp salt, mix thoroughly. Let stand 30 minutes. Place in colander or sieve and rinse under cold water, then squeeze by handsful until pretty dry and place in medium hot skillet with butter. Cook slowly. Add minced garlic and black pepper to taste. After approximately 6 minutes of stirred cooking in butter add cream, stir and remove from heat. Enough for 3 portions.
