Vegetarian Refried Beans - cooking recipe

Ingredients
    1# dry pinto beans, rinsed
    2 T minced garlic, divided
    1 med tomato, diced
    2 T cumin
    1 T chili powder
    2 T olive oil
    s & p to taste
Preparation
    Place beans in large pot - cover w/1\" water. Bring to boil on high. Drain, return to same pot & cover w/2\" water. Stir in 1 T garlic, toms, cumin & chili powder. Bring to boil over high heat, reduce to low & simmer til very soft, about 3:45, add water as needed. Mash if you want w/remaining garlic, oil & s & p.
