4 oz unsalted butter at room temperature
3 1/2 oz brown sugar
2 oz granulated sugar
1 egg at room temperature
1 teaspoon vanilla
6 1/2 oz unbleached all-purpose flour
2 oz natural unsweetened cocoa powder (not Dutch processed)
1/2 tsp baking soda
1/2 tsp salt
8 oz semi-sweet or bittersweet chocolate chips (use milk chocolate if you prefer)

Preheat oven to 350F
In the bowl of your electric mixer beat butter with paddle until creamy. Add sugars and beat at low speed until light and fluffy (for about two minutes). This process is known as the creaming method.
Beat in egg then add the vanilla.
Sift dry ingredients together and then slowly add to wet ingredients and beat ingredients until completely incorporated.
Stop machine and mix in chocolate chips with a wooden spoon.
Use tablespoon to drop cookie dough on a large ungreased cookie sheet about two inches apart. Bake cookies for 10-12 minutes.
Use a spatula to transfer cookies to a wire rack and wait until cookies cool to eat.
If you want to make plain chocolate chip cookies, you can leave out the cocoa powder. You can also add raisins, cranberries, oatmeal, or nuts to the cookie dough. Add whatever you like and enjoy.
