Citrus And Coconut Nut Bread - cooking recipe

Ingredients
    3 None egg whites
    1/2 cup sugar
    1 cup flour
    3/4 cup mixed nuts
    1/2 cup flaked coconut
    2 tsp finely grated lemon peel
    2 tsp finely grated orange peel
    2 tsp finely grated lime peel
Preparation
    Preheat the oven to 350\u00b0F. Grease an 8 x 4-inch loaf pan.
    Beat egg whites in a small bowl with an electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves.
    Transfer mixture to a large bowl. Stir in sifted flour, nuts, coconut and citrus peels. Spread mixture into prepared pan.
    Bake about 30 mins. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Wrap bread in foil. Let stand overnight.
    Preheat the oven to 250\u00b0F. Using a serrated knife, cut bread into wafer-thin slices. Place slices, in a single layer, on ungreased baking pans.
    Bake about 45 mins, turning halfway through baking time, or until dry and crisp. Cool bread on wire racks.
