Vegetable Chow Mein - cooking recipe

Ingredients
    2 tbsp soy sauce
    1 tbsp sugar
    2 tsp ground star anise
    2 tbsp peanut oil
    3 None eggs
    2 tbsp sesame seeds, toasted
    2 tsp sesame oil
    1 None onion, sliced
    2 cloves garlic, crushed
    1 None carrot, cut into thin strips
    1 None red pepper, seeded and sliced
    1 None celery stalk, thinly sliced, plus celery leaves, for garnish
    4 oz snow peas, trimmed and sliced
    1/2 cup canned bamboo shoots
    12 oz thin Chinese egg noodles
    None None Sliced green onion, to serve
Preparation
    Whisk soy sauce, sugar and star anise in small bowl. Set aside.
    Heat 1 tbsp of the oil in a wok or large skillet on medium-high heat. Whisk eggs, sesame seeds and oil in medium bowl. Pour into pan and swirl mixture around to cover bottom of pan. Cook for 1 min, until the top starts to set. Loosen the edges with a spatula. Flip over edges to fold, and remove. Slice and set aside.
    Heat remaining 1 tbsp oil in same pan on high heat. Stir-fry onion and garlic for 1 min, until onion is tender. Add carrot and stir-fry for 1-2 mins. Add pepper, celery, snow peas and bamboo shoots. Stir fry for 1-2 mins, until vegetables are tender. Add noodles and reserved sauce. Stir-fry for 2 mins.
    Serve chow mein topped with omelet, green onion and celery leaves.
