Mozzarella And Vegetable Casserole - cooking recipe

Ingredients
    1 tbsp oil
    300 g chicken fillets, cut into large pieces
    2 None red peppers, de-seeded and quartered
    200 g spring onions
    2 medium eggs
    2 medium egg yolks
    1 sprig rosemary, stalk discarded
    50 ml milk
    50 g olives, stones removed
    100 g prosciutto, for serving
Preparation
    Heat oil in a frying pan and cook the chicken for about 8 minutes until golden brown. Blanch the peppers and green onions in boiling salted water for 3 minutes then drain. In a bowl, mix together the eggs, egg yolks, rosemary and milk.
    Preheat oven to 350\u00b0F. In a 9 inch loaf pan, layer the peppers, spring onions, mozzarella and chicken, filling in gaps with olives. Pour in the egg and milk mixture and bake for about 1 hour. Serve with prosciutto.
