Goat Cheese Mini Pancakes - cooking recipe

Ingredients
    2 1/2 cups self-rising flour
    2 tbsp sugar
    2 cups buttermilk
    1 None large egg, lightly whisked
    None None Melted butter, to grease pan
    4.5 oz goat cheese, cut into 12 slices
    None None Thyme, to garnish
Preparation
    Combine flour and sugar in a large bowl. Make a well at center. Pour buttermilk and egg into well, then stir to make a smooth batter. Season to taste.
    Preheat broiler to high. Brush a large frying pan with butter to grease and place over moderate heat. For each pancake, spoon 2 tablespoons of batter into pan. Cook 3 pancakes at a time for 1 minute each side or until golden brown and cooked. Transfer to a baking sheet. Repeat to make 12 pancakes in total, greasing pan with butter between batches.
    Top pancakes with cheese. Place under broiler and cook for 1 minute or until cheese melts slightly. Serve topped with thyme.
