Chicken And Hummus Burger - cooking recipe
Ingredients

1 lb ground chicken
1/2 cup dried breadcrumbs
2 tbsp parsley, chopped
2 tbsp cilantro, chopped
2 None spring onions, sliced
1 tsp finely grated lemon zest
1 tsp ground coriander
2 tbsp olive oil
4 None ciabatta rolls, split
4.5 oz prepared hummus
3 oz baby arugula leaves
2 None tomatoes, sliced
Preparation

In a medium bowl, combine chicken, breadcrumbs, fresh herbs, spring onions, lemon zest and ground coriander. Season to taste. Shape into 4 equal-sized patties. Arrange on a tray. Chill for 30 mins.
Heat oil in a large frying pan on medium. Cook patties for 5-6 mins each side, until golden and cooked through. Drain on paper towel.
Toast or char-grill rolls. Spread both halves of each roll with hummus. Place arugula, patty and tomato on one half of each roll. Top with the other half of the roll. Accompany burgers with extra hummus, if desired.
