Egg And Bacon Pies With French Fries - cooking recipe

Ingredients
    1 lb frozen French fries
    4 slices bacon, sliced
    2/3 cup jarred roasted pepper, drained and chopped
    3 None eggs
    2/3 cup heavy cream
    1/3 cup grated mozzarella cheese
    4 sheets phyllo dough
    2 tbsp butter, melted
    2 tbsp dried breadcrumbs
Preparation
    Preheat the oven to 400\u00b0F. Place French fries on a baking pan. Bake for 30 mins or until browned and cooked.
    Meanwhile. heat a medium skillet on medium-high heat. Add bacon; cook and stir for 3-4 mins or until crisp. Transfer to a medium heatproof bowl. Add pepper to bacon; stir to combine. Whisk eggs, cream and cheese in a large bowl. Season with salt and pepper.
    Grease 4 cups of a Texas muffin pan. Cut each phyllo sheet into quarters (rectangles). For each pie, stack 4 pieces phyllo to create a star shape. brushing between layers with butter. Line prepared muffin cups with phyllo stacks. Sprinkle breadcrumbs in bottom of each crust. Top with bacon mixture. Pour egg mixture over bacon. Scrunch edges of phyllo to form a border.
    Bake for 15-18 mins or until set and golden. Let pies stand in pan for 5 mins before serving. Serve with French fries.
