Sweet Potato Burger With Goat Cheese - cooking recipe

Ingredients
    1 3/4 lb sweet potatoes, peeled and roughly chopped
    3 tbsp butter
    2 None shallots, peeled and finely diced
    1 clove garlic, peeled and diced
    1 None egg, beaten
    1 3/4 cups all-purpose flour
    1/2-1 tsp ground coriander
    3.5 oz goat cheese log, cut into 4 slices
    2 tbsp mayonnaise
    2 tsp fresh mint, chopped
    1 None lime, zested and 1/2 juiced
    4 None burger buns
    4 leaves lettuce
    2 tbsp cranberry jelly or sauce
    2/3 cup low-fat creme fraiche or sour cream
Preparation
    Cook sweet potato in boiling salted water for about 20 mins until tender. Drain, then mash and let cool for 10-15 mins. Meanwhile, heat 1 tbsp butter and sweat shallot and garlic until softened. Add to mashed potatoes along with egg, flour and ground coriander. Add a little more flour if necessary. Season then chill to firm. Form into 4 burger patties. Heat remaining butter, add burgers and cook over medium-high heat for 5 mins per side. Add 1 slice goat cheese on each burger and broil for 2 mins to melt.
    Mix mayonnaise with mint, lime zest and lime juice and season. Spread over bottom buns. Top with lettuce then burger. Mix cranberry jelly with creme fraiche (or sour cream, if using) then add a dollop to each top bun and sandwich together.
