Deluxe Chocolate Wedding Cupcakes - cooking recipe

Ingredients
    2 1/4 cups butter, coarsely chopped
    10.5 oz dark chocolate, coarsely chopped
    4 1/2 cups sugar
    2/3 cup coffee liqueur
    3 tbsp instant coffee granules
    3 1/4 cups all-purpose flour, sifted
    1 cup self-rising flour, sifted
    3/4 cup cocoa powder
    3 None large eggs
    None None Dark Chocolate Ganache
    1 cup heavy cream
    8 oz dark chocolate, coarsely chopped
Preparation
    Preheat oven to 375\u00b0F. Line 2 - 12-cup muffin pans with paper liners.
    In a large saucepan, combine butter, chocolate, sugar, liqueur, coffee granules and 2 cups water. Stir over low heat until smooth. Transfer to a large bowl and let cool for 15 mins. Whisk in flour and cocoa powder then eggs. Distribute 1/4 cup mixture into each muffin recess and bake for 40 mins. Transfer to wire racks to cool. Repeat with remaining batter.
    Meanwhile, for the dark chocolate ganache, bring cream to a boil. Pour over chocolate in a large bowl and stir until smooth. Cover bowl and chill for 30 mins, or until spreadable.
    Frost cupcakes with ganache and arrange on a tiered cake stand. Decorate as desired.
