Indian Zucchini And Carrot Fritters (Bhaji) - cooking recipe

Ingredients
    1 cup besan (chickpea) flour
    2 tsp kosher salt
    1 tsp garam masala
    1/2-1 tsp cayenne pepper
    1/4 tsp ground turmeric
    2 cloves garlic, crushed
    2 None onions, thinly sliced
    1 None carrot, coarsely grated
    1 None zucchini, coarsely grated
    1/2 cup loosely packed fresh cilantro leaves
    None None Vegetable oil, for deep-frying
    1 cup mango chutney
Preparation
    Whisk besan, salt and 1/2 cup cold water in large bowl until mixture forms a smooth thick batter. Stir in spices, garlic, onion, carrot, zucchini and cilantro; season.
    Heat oil in wok on medium-high heat. Deep-fry tablespoons of mixture, in batches, until vegetables are tender and fritters are lightly browned. Drain on paper towels.
    Serve fritters with chutney.
