Fig, Prosciutto And Goat Cheese Mini Pizzas - cooking recipe

Ingredients
    1/3 cup jarred tomato pasta sauce
    4 oz goat cheese, crumbled
    2 large fresh figs, cut into thin wedges
    4 slices prosciutto, coarsely chopped
    1 cup arugula

    1 pkg (1/4 oz) instant yeast
    1/2 tsp salt
    3 cups flour
    1 tbsp olive oil
Preparation
    For the pizza dough, combine yeast, salt and sifted flour in a large bowl. Mix oil and 1 cup warm water and gradually stir into flour. Knead dough on floured surface for 10 mins, or until smooth and elastic. Place in large, oiled bowl; cover. Let stand in warm place for 30 mins, or until dough doubles in size. Punch down dough with fist; knead dough on floured surface until smooth.
    Preheat grill to medium heat. Divide dough into 4 portions. Roll each portion into a 6-inch round. Cover grill grates with double thickness of oiled foil. Place pizza crusts on foil.
    Grill 5 mins. Using tongs, turn crusts. Spread with pasta sauce; season. Divide goat cheese, figs and prosciutto among crusts. Cook, covered, on low heat about 5 mins or until crusts are cooked through. Just before serving, top with arugula.
