Banana Maple Muffins - cooking recipe

Ingredients
    1 cup self-rising flour
    1/4 tsp baking soda
    1/2 cup sugar
    2 oz pecans, chopped
    1 tsp finely grated orange zest
    3/4 cup sour cream
    1 None large egg, lightly beaten
    1/4 cup unsalted butter, melted
    1/4 cup maple syrup
    2 None very ripe bananas. mashed
    None None Powdered sugar, to dust (optional)
Preparation
    Preheat the oven to 375\u00b0F. Lightly grease a 12-hole muffin pan.
    Sift the flour and baking soda into a large bowl. Add the sugar, pecans and orange zest and mix to combine. In a separate bowl, mix together the sour cream, egg, butter and maple syrup. Add to the dry ingredients, then add the mashed banana. Mix until just combined, but do not over-mix.
    Spoon into the prepared pan. Bake for 20 mins, until a skewer inserted in the center of a muffin comes out clean. Leave to stand in the pan for 2 mins before turning out onto a wire rack. Serve warm or cooled, dusted with powdered sugar, if desired.
