Tofu Pizzas With Gooseberries And Arugula - cooking recipe

Ingredients
    0.7 oz fresh yeast
    1/2 tsp sugar
    2 1/2 cups white bread flour
    1 tsp salt
    5 oz tofu
    1 tbsp grainy mustard
    10 oz gooseberries
    2 oz arugula
Preparation
    Crumble the yeast into a large bowl and add the sugar and 1/2 cup lukewarm water. Leave to stand for 5 minutes or until the yeast is frothy.
    Combine the flour and salt in a bowl and add the yeast liquid. Mix to a dough. Turn out onto a floured surface and knead until smooth and elastic. Transfer to a lightly oiled bowl, cover with plastic wrap and leave for about 45 minutes in a warm place, until the dough has doubled in size.
    Preheat the oven to 425\u00b0F. Blend the tofu in a food processor with the mustard and a little salt. Grease a large baking sheet. Divide the dough into 8 pieces and roll out each to a long thin strip. Place on the baking sheet.
    Spread the tofu mixture along the dough and scatter with the gooseberries. Bake for about 10 minutes until the dough is beginning to color around the edges. Serve scattered with arugula.
