Salad Of Herbs - cooking recipe
Ingredients

2 cups arugula
1/2 cup loosely packed fresh cilantro leaves
1/2 cup loosely packed fresh flat-leaf parsley
2 cups firmly packed trimmed watercress
1/2 small red onion, thinly sliced
1/3 cup pitted mixed olives, coarsely chopped
None None FOR THE PRESERVED LEMON DRESSING
1 clove garlic, crushed
1 tbsp olive oil
1/4 tsp sweet paprika
2 tbsp lemon juice
1 tbsp finely chopped preserved lemon peel
Preparation

For the preserved lemon dressing, whisk all ingredients in a small bowl.
Place salad ingredients in large bowl with dressing; season to taste. Toss gently to combine.
