Avocado, Grilled Corn And Black Bean Salad - cooking recipe
Ingredients

4 tbsp prepared citrus dressing, like Maple Grove Farms
1 None lime, zested and juiced
1 clove garlic, minced
1 pinch ground cayenne pepper (optional)
3 ears fresh corn
1 (15.5 oz) can black beans, drained
2 None avocados, peeled, pitted, diced
1 None red sweet bell pepper, diced
1/4 cup minced red onion
1/2 cup minced fresh cilantro
2 heads Boston lettuce
Preparation

Preheat grill. In a large bowl, combine dressing, 1 tbsp lime juice, 1 tsp lime zest, garlic and cayenne.
Coat corn with cooking spray and season. Grill for 1 min per side, or until lightly charred. Let cool then cut corn off cobs.
Toss corn, beans, avocados, pepper, onion and cilantro with dressing. Season. Serve in a lettuce-lined serving bowl.
