Turkey And Tomato Stuffed Mushrooms - cooking recipe

12 large mushrooms
1 tbsp olive oil
1/2 lb turkey breast, cut into small cubes
2 None garlic cloves, finely chopped
1/4 cup scallions, trimmed and chopped
1/2 cup cherry tomatoes, halved
Pinch None paprika
1/4 cup parsley, chopped, plus extra leaves to garnish
5 oz sour cream
1/2 cup cheddar, grated
Preparation

Preheat the oven to 400\u00b0F. Remove the mushroom stalks and roughly chop. Place the caps on a large baking tray lined with baking parchment.
Heat the oil in a large frying pan, add the turkey and lightly brown all over. Add the chopped mushroom stalks, garlic and spring onions. Stir-fry for 3 mins.
Stir in the tomatoes and paprika and cook for a further 2 mins. Stir in the chopped parsley and season to taste with salt and freshly ground black pepper.
Spoon the mixture into the mushroom caps, top with the sour cream and grated cheddar. Bake for 10-12 mins until the sour cream is slightly plump and golden. Garnish with the extra parsley.
