Chickpea And Chorizo Salad - cooking recipe

Ingredients
    1/2 loaf stale bread, torn into pieces
    1 1/2 tbsp olive oil
    2 None raw chorizo sausages
    1 None red onion, thinly sliced
    9 oz cherry tomatoes, halved
    1 (13.5 oz) can chickpeas, drained, rinsed
    3.5 oz mixed greens
    2 stalks celery, sliced
    2/3 cup fresh flat-leaf parsley leaves, chopped
    2 tbsp balsamic glaze
Preparation
    Preheat oven to 350\u00b0F. Arrange bread on a baking tray and drizzle with 1 tbsp oil. Season to taste. Bake for 5-10 mins, until crunchy and golden. Set aside.
    Heat remaining oil in a large frying pan over medium heat. Fry chorizo for 8-10 mins, turning, until browned. Slice thinly. Return to pan along with onion and tomatoes. Cook for 1-2 mins, until slightly softened. Add chickpeas, tossing to warm through. Transfer to a bowl and toss with salad greens, celery, parsley and croutons. Drizzle with balsamic glaze.
    Serve immediately.
