Chicken, Potato And Broccoli Casserole - cooking recipe

750 g medium sized potatoes
1 head broccoli, cut into florets
2 tbsp oil
350 g chicken breast, cut into thick slices
5 medium eggs
150 g cream
1/2 bunch oregano, chopped + some for garnishing
1-2 cloves garlic, finely diced
50 g parmesan, grated
Preparation

Cook the potatoes in boiling salted water for about 20 mins until soft then set aside and allow to cool. When cooled, peel and cut into thick slices. Cook the broccoli for about 8 mins in boiling salted water then drain and allow to cool. Heat oil in a frying pan and cook the chicken until golden brown.
Preheat oven to 350\u00b0F. In an oven proof casserole dish, layer the potato slices then top with chicken and broccoli. Whisk together the eggs and cream, season with salt and pepper then stir in the oregano and garlic. Pour into the casserole and top with grated parmesan. Bake for about 40 mins until golden brown and serve garnished with oregano.
