Minute Steak With New Potato Salad - cooking recipe

Ingredients
    5 oz baby new potatoes
    1 tbsp lowfat yogurt
    1 tbsp lowfat salad dressing or vinegar
    1 pinch sugar
    1/2 bunch chives, snipped (reserve a few for garnish)
    1/2 bunch arugula
    5 oz steak, pounded thin and trimmed of fat
    1/2 None tomato
    1/8 oz Parmesan cheese, grated
    1/8 None red onion, cut into rings
Preparation
    To make the potato salad, cook the potatoes in boiling, salted water for about 15 mins. Drain, rinse under cold water and cut into slices. Mix together the yogurt and salad dressing, season with salt, pepper and sugar, then gently mix with the chives, arugula and potato slices.
    To prepare the steak, heat frying pan brushed with oil, cook the meat and tomato on both sides for 1-2 mins. Season with salt and pepper. Remove from the heat and immediately sprinkle the tomato with Parmesan cheese. Arrange the meat, tomato and potato salad on a plate and sprinkle over the onion rings and reserved chives.
