Zucchini And Halloumi Fritters - cooking recipe

Ingredients
    14 oz zucchini (about 4 medium-sized), grated
    1 tsp salt
    4 None shallots, peeled and sliced
    2 tbsp mint, chopped
    1 tbsp parsley, chopped
    4.5 oz halloumi cheese, grated
    2 None large eggs, lightly beaten
    1/3 cup rice flour
    None None Olive oil, to pan fry
    None None Lemon wedges, to serve
Preparation
    Place the grated zucchini in a colander, sprinkle with salt and leave for 30 mins.
    Squeeze out the excess moisture and pat dry with paper towels.
    Place the zucchini, shallots, mint, parsley, halloumi and eggs in a bowl and mix to combine. Sift in the flour, mix, and season to taste.
    Heat oil in a large, non-stick frying pan over a medium heat. When hot, add tablespoons of the zucchini mixture.
    Flatten the fritters slightly in the pan and cook for 2-3 mins each side or until golden brown. Transfer to paper towels and repeat with remaining batter.
    To serve, arrange the fritters on a serving plate with lemon wedges on the side.
