Curry And Lime Lentil Soup - cooking recipe

Ingredients
    2 tsp vegetable oil
    1 tbsp hot curry paste
    1 None medium onion, finely chopped
    2 cloves garlic, minced
    3/4 inch fresh ginger, grated
    1 tsp cumin seeds
    7 oz red lentils
    2 cups vegetable stock
    1 (13.5 oz) can chopped tomatoes
    1 tsp lime zest
    1/4 cup lime juice
    3 tbsp fresh flat-leaf parsley leaves, chopped
Preparation
    Heat oil in large saucepan. Cook curry paste, stirring, until fragrant. Add onion, garlic, ginger and cumin. Cook, stirring, until onion has softened. Add lentils, stock, tomatoes and 2 1/2 cups water. Bring to a boil then reduce heat and simmer for 20 mins, or until lentils are softened.
    Stir in lime zest and juice. Return to a boil then remove from heat and stir in parsley.
