Orange And Limoncello Squares - cooking recipe
Ingredients

250 g plain flour
1 slightly heaping tsp baking powder
3 None oranges, grated zest of 1/2, all peeled, pith removed, thinly sliced
10 None eggs, separated
350 g caster sugar
175 ml light olive oil
3 tbsp limoncello
None None Icing sugar, for dusting
Preparation

Preheat the oven to 350\u00b0F. Grease a 12 x 17 inch baking tray. In a bowl, mix the flour, baking powder and orange zest. In a separate bowl, beat the egg yolks, 1 cup sugar and a pinch of salt. Gradually beat in oil and limoncello. Stir into the flour mixture.
Beat the egg whites until stiff peaks form, gradually adding 2/3 cup sugar. Fold into the egg yolk mixture in batches. Spoon into the pan and smooth. Arrange orange slices all over the top. Bake for 20-30 mins, until a skewer comes out clean.
Allow to cool on a wire rack. Cut into 24 squares and dust with powdered sugar.
